Ingredients

  • 2 racks of baby back ribs

Bourbon BBQ Sauce

  • 120ml steak sauce
  • 120ml bourbon
  • 2 tbsp. Worcestershire sauce
  • 45g dark brown sugar
  • 1 tsp, Dijon mustard
  • Red pepper flakes
  • Salt

  • BergHOFF Ceramic BBQ
  • Baking Tray
  • Foil
  • Pastry brush

Method

METHOD

  1. Begin by making the Bourbon sauce. Combine all the ingredients in a bowl and mix until the sugar has dissolved.
  2. Refrigerate until needed (the sauce can be kept refrigerated for up to two weeks)
  3. Preheat your oven to 175⁰C and cut the ribs in half, horizontally
  4. Take 120ml of the sauce and rub it into the ribs, paying particular attention to the meat
  5. Arrange the ribs, meat-side down on a baking tray and cover with foil
  6. Cook for one hour or until the meat is tender and begins to pull away from the bone
  7. If not using immediately, chill the rips for up to one day. Bring them back to room temperature before cooking on the BBQ
  8. Preheat your BBQ to medium-high.
  9. Take half of the remaining sauce and use it to brush the meat before grilling on the BBQ until crispy and fully heated through (approximately 10 minutes). Frequently move the ribs around whilst grilling to prevent them from burning
  10. Allow the meat to rest for 10 minutes then cut into 1-2 bone portions and serve with the remainder of the sauce
