  • 4 Beef plate short ribs
  • Salt
  • Black pepper

  • BergHOFF Ceramic BBQ
  • Tin Foil
  • Probe Thermometer

 

Method

METHOD

  1. Preheat your BBQ to 121⁰C
  2. Begin by sprinkling the salt and pepper onto the ribs (the ribs will taste even better if you can do this stage the night before)
  3. Arrange the ribs on the grill and close the lid
  4. Allow the ribs to cook until the thickest part reaches a temperature of 65⁰C. This should take approximately 3 hours
  5. Use tin foil to tightly wrap each rib then place back onto the BBQ, increasing the temperature to 150⁰C
  6. Allow the ribs to cook until the thickest part reaches a temperature of 95⁰C. This should take a further 3 hours
  7. Remove the ribs from the grill. Keep the foil on and wrap them together in a large sheet of foil
  8. Leave the meat to rest for an hour before serving
