Ingredients

  • 445g dried chickpeas
  • 660ml full fat milk
  • 1 tsp. chopped rosemary leaves
  • 1 garlic clove
  • 60g grated parmesan cheese
  • 240ml olive oil

  1. Tip the chickpeas into the blender, ensuring the lid is securely fastened
  2. Begin to blend on Variable 1. Gradually increase to the fastest setting and allow to blend for 30 seconds
  3. Set aside 150g of the chickpea powder for the recipe, plus extra for dusting. Store the remainder in an airtight container
  4. Add the milk, rosemary and garlic to a pan and bring to the boil. Reduce the heat and leave to simmer for 5 minutes
  5. Whisk the chickpea powder into the mixture and heat to medium-high until the mixture begins to come away from the side of the pan
  6. Transfer the mixture to the blender and add the parmesan. Ensure the lid is securely fastened
  7. Blend on Variable 1 then gradually increase to the highest setting and allow to blend for a further 30 seconds
  8. Line a 20cm square tin with cling film (ensuring there is enough film to fold over the mixture)
  9. Pour in the mixture and cover with the cling film
  10. Refrigerate for 2-3 hours or until firm
  11. Remove from the tin and the cling film and cut into slices approximately 2 inches long
  12. Take a small saucepan add about 1.3cms of olive oil. Heat to medium-high
  13. Dust the fries in the remainder of the chickpea powder and pan-fry in batches of 4 or 5 until golden brown
  14. Serve immediately and enjoy
