Crispy Lamb Sweetbreads with Fresh Peas and Tarragon

Ingredients

  • 200g lamb sweetbreads
  • 200mls whole milk
  • 50g fresh peas
  • 3 sprigs of tarragon
  • 3 tbsp seasoned plain flour
  • 2 tbsp oil
  • Salt
  • 1 tbsp butter

Method

  1. Preheat your water bath or circulator to 60°C
  2. Bring a pan of water to the boil and submerge the sweetbreads for 1 minute, then shock in ice cold water
  3. Peel the membrane off the sweetbreads and pat dry
  4. Place the sweetbreads into a pouch with the milk and 1 sprig of tarragon. Seal the pouch and cook for 1 hour in your preheated water bath
  5. When ready, remove the sweetbreads from the pouch, pat dry and coat lightly in the flour
  6. Place a pan onto a moderate heat, add the oil and colour the sweetbreads until golden and crispy then season
  7. Using the same pan add the peas, butter and tarragon then serve with the sweetbreads when hot
