Ingredients

  • 75 cl bottle of dark rum
  • 120g kumquats cut in half
  • 30g freshly sliced ginger – thin sticks
  • 15g freshly sliced red chilli – seeds and all

Equipment

Method

  1. Pre-set your water bath or circulator to 70°C
  2. Pour all the ingredients into a suitable sized kilner jar or pouch
  3. Close the lid and cook for 4 hours
  4. Once the time is up, carefully remove the kilner from the bath and allow to cool
