Ingredients

  • 570g grated Courgette
  • 300g Walnuts
  • 300g Dates
  • 100g Raisins
  • 2 tsp Cinnamon
  • 1 tsp pure Vanilla Extract
  • 1/2 tsp Sea Salt
  • 100g Psyllium Husk
  • 60g shredded unsweetened Coconut

A courgette bread recipe that is so easy to make using your dehydrator

METHOD

  1. Line your dehydrator trays with Paraflexx sheets
  2. Use a food processor to shred/grate the courgette then set aside in a large bowl
  3. Blitz the walnuts in the food processor. Once they have formed a powder add the dates, vanilla and cinnamon and continue to blitz until all the ingredients are combined
  4. Transfer the nut mixture into the bowl with the courgettes and stir. The moisture from the courgettes will combine the ingredients so there is no need to add any water
  5. Add the coconut, psyllium husk and raisins and combine. Use your hands to mould the mixture into 10 small loaves and arrange them on the lined dehydrator sheets
  6. Dehydrate on high for approximately one hour before reducing the temperature to 43⁰C and continue to cook for an additional 5 hours
