Dehydrator Paleo Biscotti

  • 2 Types of nuts* (eg. brazillian, pine, almonds, cashews, walnuts, sunflowers, macadamia)
  • Honey (amount is optional but you will need enough to hold the mixture together)
  • Amaranth (optional)

*You could substitute one of the nuts for dates if you prefer




  1. Place the nuts (or dates if using) into a bowl
  2. Pour in the honey and combine
  3. Add the amaranth if using
  4. Line the Excalibur trays with paraflexx or parchment, and spread the mixture on top
  5. Cut into either squared or fingers before setting to dehydrate at 52⁰C for 12-24 hours
