Sous Vide Pumpkin

Sous Vide Pumpkin Vegetables and Sides
  • COOK TIME: 45 Minutes
  • PREP TIME: 15 Minutes
  • SERVES: 4


  • 1 Small Pumpkin
  • 4 Sage Sprigs or 12 Leaves
  • 1 tbsp Smoked Paprika
  • 50g Parmesan, shaved
  • Salt



  1. Preheat your water bath to 85 degrees
  2. Peel the pumpkin and remove the seeds, portion into wedges and season with salt
  3. Dust the pumpking with paprika and place in a pouch along with the sage, and vac-seal
  4. Put the pouch into your water bath for 45 minutes or 1 hour 30 minutes depending on the size ofyour pumpkin
  5. Keep checking the bath to make sure the water is covering the pouch
  6. Remove the pumpkin when tender and colour in a hot pan to caramelise, serving immediately
  7. You can place the pouch in ice water until cold and keep in the fridge for up to three days

To regenerate from cold heat the pumpkin in a hot pan.

Chef’s Tip –

Pumpkin goes really well with orange so why not add marmalade to the pouch.
