Roasted Parsley Root, Pickled with Gin

Roasted Parsley Root, Pickled with Gin Vegetables and Sides

  • 500g Parsley Root, peeled and washed
  • Zest 1 Orange
  • 10 Large Sprigs Thyme
  • 75mls White Balsamic Vinegar
  • 100mls Gin
  • 2 tsp Crushed Juniper Berries
  • 3 tbsp. Honey
  • 75mls Olive Oil




This under-used vegetable has lovely floral flavours and in this recipe it comes to life as its own dish.


  1. In a small bowl mix the orange zest, balsamic, thyme, juniper, honey, gin and olive oil
  2. Place the parsley root in a vacuum pouch, add the liquid mix and vac-seal
  3. Cook in a preheated water bath at 88 degrees for 45 minutes
  4. Take the parsley root from the pouch and in a hot griddle pan, caramelise being a little careful as the honey is sweet

Chef’s Tip –

Why not cook the root with a little white truffle cream for a decadent flavour.
