Sous Vide Smoked English Asparagus, Truffle Oil and Chicken Juices

Ingredients

  • 1 bunch of asparagus
  • 1 tbsp truffle oil
  • ¼ cube of chicken oxo powder
  • ¼ lemon juice
  • 1 tbsp butter

Method

  1. Set your water bath or circulator to 90°C
  2. Place your asparagus into a pouch with salt and vacuum until airtight
  3. Cook the asparagus sous vide for about 5 mins or to the desired texture, then remove the asparagus from the pouch and place onto a dry towel
  4. Using a hot pan, char the asparagus until slightly burnt, then add the butter, crushed oxo cube, lemon juice and baste
  5. Serve and enjoy

Chef’s Tip:

Add a poached egg and a dollop of hollandaise for a cheeky way to start the day.
