Sous Vide Chai tea

Ingredients

  • 3 chai tea bags
  • 650 ml of water – filtered
  • 1 vanilla pod – split
  • ½ cinnamon stick
  • 2 tbsp honey
  • 120ml of dark rum.
  • 35g soft brown sugar
  • 150 ml milk – for the pouch
  • 150ml milk for the foam.
  • 2-star anise
  • 1 tsp mixed spice

Method

  1. Pre heat your water bath to 70°C
  2. Place all the ingredients into a pouch except the milk for the foam and seal the pouch.
  3. Cook for 2 hours, then remove from the pouch and strain off.
  4. Using a coffee steam wand or milk frother, steam the milk until frothy
  5. Divide into cup portions, pour over the frothed milk and grate some fresh star anis over the top.
