This recipe was created in a professional kitchen – however should you have a slightly smaller work space, most at-home cooks find the SousVide Supreme™SVS-09L Demi Water Oven is most space-efficient in their kitchen.

  1. Coat the steaks with the dry rub before placing into a vac pac along with a slice of unsalted butter.
  2. Preheat your water bath to 58°C for a medium rare steak and drop the individually sealed steaks into the water, ensuring that they don’t touch one another.
  3. Cook for 2 hours.
  4. Once cooked, removed from the vac pacs and towel dry with kitchen paper.
  5. Heat a good drizzle of rapeseed oil in a frying pan and finish off the steak by cooking for 60 seconds on both sides.
  6. Whilst the steak is cooking, you can make the rocket pesto;
  7. Blend together the rocket, garlic, birds eye chilli and lemon juice in a food processor until mixed together well.
  8. Add extra virgin olive oil and mix again.
  9. Add salt and freshly ground black pepper to taste.
