Sous Vide Fillet Steak with Rocket Pesto

Ingredients

  • 4 individual matured fillet steaks (each cut to about 2 inches thick)
  • 4 teaspoons extra dry steak rub
  • 2 tablespoons extra virgin olive oil
  • 2 large handfuls (or one large pack) of rockets leaves
  • 8 garlic cloves (peeled)
  • 2 tablespoons rapeseed oil
  • The juice of 1 lemon
  • 4 slices unsalted butter (about the thickness of a £1 coin)
  • 1 hot birds eye chilli (leave the seeds in)
  • Sea salt and freshly ground black pepper

For the dry steak rub

  • 4 tablespoons smoked paprika
  • 3 tablespoons cayenne pepper
  • 5 tablespoons freshly ground black pepper
  • 5 tablespoons garlic powder
  • 3 tablespoons onion powder
  • 6 tablespoons salt
  • 2 tablespoons dried oregano
  • 2 tablespoons dried thyme

Method

  1. Coat the steaks with the dry rub before placing into a vac pac along with a slice of unsalted butter.
  2. Preheat your water bath to 58°C for a medium rare steak and drop the individually sealed steaks into the water, ensuring that they don’t touch one another.
  3. Cook for 2 hours.
  4. Once cooked, removed from the vac pacs and towel dry with kitchen paper.
  5. Heat a good drizzle of rapeseed oil in a frying pan and finish off the steak by cooking for 60 seconds on both sides.
  6. Whilst the steak is cooking, you can make the rocket pesto;
  7. Blend together the rocket, garlic, birds eye chilli and lemon juice in a food processor until mixed together well.
  8. Add extra virgin olive oil and mix again.
  9. Add salt and freshly ground black pepper to taste.
