Sousvide Sweetcorn and Green Chilli Soup

  • COOK TIME: 1 Hour 30 Minutes
  • PREP TIME: 10 Minutes

  • 1 bag of frozen sweetcorn
  • ½ a medium onion – sautéed to golden
  • 3 bulbs of roasted garlic – peeled
  • Salt and pepper
  • 200mls of chicken stock 
  • 1 large whole green chilli – skin blowtorched then removed. De-seeded


  1. Set your water bath or circulator to 83°C
  2. Place all the above ingredients except the green chilli into a pouch and seal
  3. Place the pouch into the pre-heated bath for 1 ½ hours
  4. Then carefully remove the pouch from the bath, emptying the contents into a blender along with the green chilli and blend until smooth (pass if required)
  5. Season to taste and serve
