Ingredients

  • 4 x 200g cod loin portions skin on
  • 1 tbsp. red Thai curry paste
  • 100mls coconut milk
  • 10mls chicken stock
  • Zest of 2 limes
  • 2 tbsp. fish sauce
  • Sea salt
  • 100g roasted salted peanuts – crushed
  • 6 Pak Choi
  • 3 tbsp. dark soy
  • 50g coriander herb chopped
  • Fresh lime
  • Sesame oil

Method

  1. Place the cod skin side down on a plate and season with salt. Leave to cure for 1 hour in the refrigerator
  2. Pre heat water bath to 55 degrees
  3. In a bowl, whisk the curry paste, coconut milk, chicken stock, lime zest and fish sauce.
  4. Place the cod in individual sous vide pouches, equally divide the coconut curry sauce between the pouches and vacuum seal
  5. In a hot pan sauté the Pak Choi with sesame oil until blackened. Add the soy to season and a squeeze of lime juice
  6. Cook the cod in the water bath for 30 minutes. When the cod is cooked, take them from the pouches and peel the skin before serving with the Pak Choi. Garnish with lime wedges, chopped coriander, roasted Pak Choi and peanut crumble.
